LAVENDER LEMONADE


5 cups water
1½ cups sugar
12 stems of fresh lavender
2¼ cups lemon juice


Boil 2 ½ cups of water with the sugar.
Add the lavender stems and remove from heat.
Place on the lid and let cool.
When cool, add 2 ½ cups of water and the lemon juice.
Strain out the lavender.
Serve the lavender lemonade with crushed ice
and garnish with lavender blossoms.

Serves 8.


 


Blueberry Lavender Cranberry Crisp

Prep Time: 15 minutes
Cook Time: 25 minutes
Yield: 6 to 8 servings

Filling:
3 cups blueberries
1 cup cranberries
1/2 teaspoon lavender flowers
3/4 cup sugar

Topping:
1-1/2 cups crushed oatmeal graham crackers
1/2 cup brown sugar
1/2 cup melted butter
1/2 cup sliced almonds

Preheat oven to 350 degrees F.

Combine blueberries, cranberries, lavender flowers, and sugar. Mix well and pour into an 8 x 8-inch baking pan.

Combine crushed crackers, brown sugar, melted butter, and sliced almonds. Crumble over the top of the filling.

Bake for 20 to 25 minutes, until filling is bubbly. Cool at least 15 minutes before serving.

 

 


 

Adding Dried Lavender to Recipes

The secret to cooking with lavender is: a little goes a long way. It has a strong flavor, so start with a small amount and add more to taste. Always use lavender that is labeled “For Culinary Use” in cooking. Organic is best if you can find it. See our Lavender Products link for this item!
A few suggestions for adding dried lavender to your recipes are listed below:

  Use dried lavender as you would any other dried herb in casseroles, soups or stews. It’s best to grind the dried flower buds first in a clean coffee grinder then stir them into the dish, but remember to use it sparingly.

For tofu (meat, fish or poultry) blend a mixture of 1 part ground, dried lavender and 2 parts garlic powder (or a mixture of garlic and onion powder), plus salt and pepper to taste. Use as a rub before roasting or grilling.

Add 2 teaspoons of ground, dried lavender to any bread, cake or\cookie mix or recipe, including yeast breads, layer cakes, pound cakes and sugar cookies. Mix and bake as directed.
